Singapore and Malaysia both claim to be the place of origin for Hainanese chicken rice, the smooth-skinned, sweet, firm-fleshed dish served with broth-boiled rice. But, if Hainanese chicken rice didn’t originate from Hainan, why does it have that name? I arrived in Wenchang, the birthplace of Hainanese chicken rice, to taste and track down the most authentic Wenchang chicken.

Shanghai and another five cities with an urban population of more than 10 million have been ranked as “super cities” in a report by the Ministry of Housing and Urban-Rural Development. According to 2019 statistics, they are Shanghai, Beijing, Chongqing, Guangzhou, Shenzhen and Tianjin.
